For your business "birth data" I chose to use the date, time, and location for the registration of the business. Because for me I was working on it for months before in various ways, but this felt like the day it was truly "born". It felt like that was the day I said yes to truly putting my energy behind this work.

Go with your gut on this. Don't overthink it. Just give me a time that feels meaningful for the business. For example registration, first social media post, first offer, a moment of a big pivot or when the "current" version of the business began.

Ideally you would also know the exact time of the business "birth" that you are giving me. However, if you truly can't find an exact timestamp of the day that feels meaningful to you use either 6am, 12pm, 6pm, or 12am. This will still vary quite a bit from an exact time but most of the chart is likely to be the same across a few hours.
